If you stroll around the town of Bellingham, Washington near the Canadian border, you can't miss Mallard's. In this town of small shops, and grey skies "Fresh Made Mallard Ice Cream" stands out with it's sprawling neon marquee. Step inside and you'll be greeted by a huge board of ever-changing flavors like cardamom, espresso chip and Yerba Mate'. Take a glance around and you might see teenagers laughing around the tables or a family playing one of the many board games. Mallard's seems to want to be a community icon, and in it's own way it has succeeded.
"What about the ice cream?"
The first time I went to Mallard's, it was a small, humble shop with huge scoops of wild, and wildly delicious ice cream. The shop may be bigger, and the scoops smaller, but you certainly won't be disappointed. I recommend you try the coconut almond chocolate chunk.
